Mother's Day Brunch Ideas!

Mother’s Day is quickly approaching and (hopefully) we have all considered how we will treat that special woman in your life!  In addition to the standard flowers and card combination, why not “wow” Mom with a fantastic brunch?

I asked my own mother what her ideal brunch would be given my shortcoming in ever being able to make the perfect pancake (it runs in the family).  Laughing, she noted that she’d love the classic but versatile omelet- with plenty of veggies mixed in!  Although the omelet is often seen as a pinnacle of cooking staples it is always one that can be difficult to perfect. Still, with these crucial tips and some Sunday morning practice your next omelet can be more than just scrambled eggs!

Why not add a sweeter touch to the meal by whipping up a half dozen yummy and light popovers!  Popovers are super easy to prepare; my sister and I would make these for special breakfasts’ even when we were younger.  What’s better? They can be sprinkled with any type of topping including jams, fresh berries, or confectionary sugar!
